Yesterday, I spent the afternoon baking. It started off with my Christmas Cake, which is an old favourite recipe from BBC Good Food Magazine, I have the cutting from the magazine from 1998 and again in 2002 - its the same recipe and thankfully is also still on the website, so I dont have to type it all out for you! Its the Simmer and Stir Christmas Cake and it is just so easy. Last year I made the Nigella chocolate Christmas Cake, which was really lovely but decided to go back to my old favourite this year.

Then I decided to make the Banana Butterscotch Loaf from Marias blog: The Goddesss Kitchen. I had taken the ingredient list with me when shopping last week, but there was no Green and Blacks Butterscotch Chocolate, so I got the Ginger one instead. It was an easy recipe to make although using so much Green and Blacks Chocolate, would be one that I would keep for a special occasion. It is very sticky but very rich with an exceptional sugar hit. I forgot to put the pecans and demerara sugar on the top, which would have made it look prettier, but it didnt affect the taste. Also I didnt have a3lb loaf tin, so I used the one I have and made the rest of the mixture into muffins which cooked in about 15 minutes

Finally, I had to do something with the apples that had been lurking about in a basket for a couple of weeks. My MIL had got them from her friend and some were beginning to get past their best. I made some apple pickle, which I will blog later when I have put it in jars, and then made the rest of the apples into a crumble (cheating with a ready made crumble mix) which I have put in the freezer. I also froze the Banana Loaf, cut into slices, as we would never get through all that.

Spicy chicken sandwich


Ingredients
  • Chicken boneless 2 breasts marinate and cook exactly like Sicilian pizza.
  • Croissants 2
  • Mayonnaise 2 tbsp heaped
  • Mustard paste 1 tsp
  • Salad leaves 2
  • Tomatoes sliced 2
  • Pickled cucumber sliced 2
  • Cheddar cheese grated 4 tbsp
Method
  • Marinate thinly sliced chicken breast exactly like Sicilian pizza, grill in 2 tbsp oil and give dum of coal, slit open the croissants into half, toasted apply with mayonnaise and mustard paste, spread salad leaves, tomato slice, pickled cucumber, grilled chicken, put cheddar cheese grill for 2 minutes till cheese melts, cover with second piece of croissants and serve immediately

Dahi kabab


Ingredients
  • Mince ½ kg
  • Chili powder 1 tsp
  • Gram lentil ½ cup
  • Salt 1 tsp
  • Onion 1 large chopped
  • Ginger garlic 1 tbsp
  • Allspice 1 tsp
  • Egg 1
  • Hung curd 3 tbsp
  • Nutmeg and mace grinded ¼ tsp each
  • Green cardamom grinded ¼ tsp
  • Green chilies 4 finely chopped
  • Coriander leaves finely chopped 4 tbsp
  • Onion chopped 2 tbsp
  • Mint leaves finely chopped 2 tbsp
Ingredients for yogurt mixture
  • Thick curd whipped 2 cups
  • Chili powder ½ tsp
  • Chat masala ½ tsp
  • Roasted cumin crushed ½ tsp
  • Black salt pinch
  • Sugar 1 tbsp
  • Sweet imli chatni 4 tbsp
Method
  • Boil the mince with gram lentil, salt, chili powder, onion, ginger garlic paste, 2 cups water until mince tender and mixture dries, cool and dry in chopper with allspice, hung curd, nutmeg, mace, green cardamom, remove from chopper add in egg, chopped onion, coriander, mint and green chilies, shape into tikyas, shallow fry in hot oil on tawa till golden. 
  • To serve.Place kababs in a platter, cover generously with yogurt mixture, drizzle with imli chatni, garnish with fresh coriander and green chilies.

Breakfast / Dessert / Healthy lunch box for kids

Ingredients

One cup whole wheat flour
3 tbsp grated jaggery
2 cups thin sour buttermilk
1/4 tsp baking soda / baking powder
2 tbsp grated coconut - fresh / dehydrated
Pinch of cinnamon powder
2 tbsp sliced seedless dates
2 tbsp raisins ( optional)
Pinch of salt
Oil / Butter for cooking


Add all the dry ingredients in a bowl. Slowly add the buttermilk with constant stirring to avoid lumps. The consistency of the batter should be such that it sticks to the back of the ladle after mixing.

Grease a non stick pan with few drops of vegetable oil / butter. Once pan is hot, add a couple of tbsps of batter and spread into pancake. Cook on both sides till golden brown using a little oil/ butter.

This makes about 6-7 depending on the size of the pancakes.

Note:


This is high in fibre due to whole wheat flour and dates, rich in iron from jaggery and dates. Excellent for kids who refuse to eat chapatis, and tasty nutrition for pregnant women.

If you dont have cinnamon powder on hand, by all means use cardamom powder or fresh grated nutmeg for that divine aroma and taste.

For dessert one can make it richer by drizzling honey over warm pancakes or dusting powdered sugar. Serve it with a scoop of vanilla icecream or a blob of sweetened whipped cream for that added jazz!

Well, its wedding season, which means its time to buy a new dress for every one of the 7 weddings youre attending over the next three months. Or, you could buy this jumpsuit and call it a day. Which brings me to my first question: is it okay to wear a jumpsuit to a wedding? I mean, gone are the days of fashion rules at weddings (Im sorry, black is okay now?? And I would be lying to you if I said I DIDNT see someone wear cream to a wedding recently...), so whats to say you couldnt sport a grown up lady onesie at your next wedding? I dunno, I just bought this jumpsuit, and Im giving some serious thought to wearing it to my friend Lauras wedding at the end of June. But not before I top it with this pearl-button blazer:

Gluten and egg free vegan fruit flan recipe

It is summer time now in the United Kingdom.

Chef Jeena will be cooking lots of summer food recipes for you to enjoy, so keep visiting us.

Chef has baked a gluten free vegan fruit flan recipe that is simple to bake, delicious to eat and looks amazing when placed on the table for a dessert.

The flan base is a combination of dairy free margarine, sugar, rice flour and ground almonds with a little ground flax seed to help bind the mixture together.

Chef topped the gluten free flan base with some dairy free cream using fresh vanilla pods, but you could also use Chefs vegan whipped cream recipe.

The fruit topping was made of fresh strawberries and blueberries and it tasted wonderful.

This flan did not last very long in Jeenas Kitchen, so make sure you get a piece of this fruit flan recipe to eat yourself or else everybody just might devour it before you get a chance to eat some yourself-enjoy.





Ingredients for chefs fruit flan recipe


100g Margarine
100g White caster sugar
100g Ground almonds
80g Rice flour
2 Tbsp Ground flaxseed
2 Tbsp Cornflour (corn starch)
80g White caster sugar
1 tsp Xanthan gum
1 tsp Baking powder
Pinch salt
1 Tbsp Vanilla essence
150ml Soya milk

Chefs Dairy free cream recipe
or Chefs Vegan whipped cream
Fresh strawberries and blueberries

How to make a gluten free vegan fruit flan recipe


Cream margarine and 100g caster sugar together using a mixer. Add almonds, rice flour, baking powder, salt, xanthan gum, flax powder and corn starch - mix well.

The flan mixture will start to come together very thick - start adding the milk gradually.




Picture of tablespoons of ground flaxseed and cornflour.



Add 80g of sugar and vanilla essence - mix well.


Pour into a greased and floured flan tin - I only needed 3/4 of the flan base mixture and baked some of my vegan mini cupcakes with the left over mixture.

Place into a hot oven at gas mark 6 and 1/2 (in between gas mark 6 and 7) for 25 minutes - do not open the oven door until 20 minutes has past.



Leave the flan base in the hot oven tin for 8-10 minutes before removing the flan from the oven tin. Leave on a cooling rack to cool down completely.



Once cool spread with fresh dairy free cream and top with fresh fruit.

Quick Last Minute Appetizers

We went to a party on New Years Eve and I said I would bring a few appetizers. I was going to make those awesome risotto cakes again but I just did not have the time to make them. I decided to take some help from the supermarket and bought a package of puff pastry (which always comes in handy when youre in a fix) and a tube of pillsbury pizza dough. Forget that its pizza dough because it doesnt taste anything like pizza dough, it has a lot of butter in it but it works well as a base for an appetizer.

So I made puff pastry pinwheels and a caramalized onion, mozzarella and kalamata olive flatbread. They both came out great and were a big hit! I used the recipe on the box of the puff pastry as a guide to making the pinwheels and just changed some things around. Here is the original recipe for what they call Spinach Cheese Swirls. Spinach Pinwheels

Ingredients:

1 box of puff pastry (two sheets), defrosted
1 egg and 1 tbsp of water, beaten
6 oz of shredded mozzarella
1/4 cup grated romano cheese
1 onion, diced
1 clove garlic, minced or grated
1 tbsp extra virgin olive oil
salt and pepper, to taste
1 10 oz box of frozen spinach, defrosted and drained well. (Squeeze all the water out of the spinach or it will make the pastry soggy.)

Directions:

1. Saute onion and garlic in oil until onions are tender and translucent. Add spinach and stir to combine. Let cool.

2. Add cheeses to spinach mixture, taste and season with salt and pepper accordingly.

3. Lay out one sheet of puff pastry on a flat surface that has been dusted with flour.

4. Spread half of the mixture onto the dough.

5. Roll puff pastry jelly roll style and slice into 1/2 inch slices. You may want to cut off the ends if they are uneven.

6. Lay slices out onto a parchment lined baking sheet and brush tops with egg wash.

7. Bake at 400 for about 15 minutes or until golden.

Caramelized Onion, Mozzarella and Kalamata Flatbread

Ingredients:

1 tube of Pillsbury refrigerated thin style pizza dough
1 large onion, sliced
1 package diced pancetta
2 tbsp extra virgin olive oil
Approx 1/2 cup kalamata olives, sliced in half
6 oz. shredded mozzarella
5 leaves basil, torn.

Directions:

1. Spray a baking sheet with cooking spray and arrange dough to fit into pan.

2. Saute pancetta in 1 tbsp olive oil until crispy. Remove and set aside.

3. Saute onions pancetta drippings and 1 more tablespoon of oil on low heat until they become very tender and sweet, about 15 minutes. Do not let them brown. Let cool.

4. Top dough with pancetta, onions, olives, mozzarella and basil.

5. Bake at 400 for 10-15 minutes or until cheese is melted and bubbling.
