Gluten Free Dark Chocolate Goddess Cake

Gluten free dark chocolate cake
A rich dark gluten-free cake made with almond flour

This recipe is one Ive played with for years. It began in the nineties as one of those trendy flourless chocolate things with ten eggs, and has evolved into mere semi-indulgence with only seven eggs and some extra cocoa powder for a little more structure.

Karinas Dark Goddess Cake Recipe

Originally published February 2006.
I love flourless chocolate cakes. So creamy and dense. But last night I experimented with blanched almond flour to see what would happen. It produced a deep dark chocolate experience. A worthy cake. And please note, Kind Reader, it only gets better as it sits overnight.

Ingredients:
12 ounces bittersweet or dark chocolate, chopped
1 1/2 sticks unsalted butter, cut into pieces (6 oz. butter)
1 tablespoon bourbon vanilla extract
7 large organic free-range eggs
1 cup organic light brown sugar, packed
1/2 cup organic white cane sugar
1/4 cup organic unsweetened cocoa
1/2 cup almond flour

To serve:

Sifted cocoa powder or powdered sugar
Fresh seasonal berries
Whipped cream, if desired

Instructions:
Preheat oven to 350ºF.

Line the bottom of a 9-inch Springform pan with a circle of parchment paper; tenderly butter the paper. Think: chocolate love.

Place the chocolate and butter in a medium to smallish saucepan, and set the pan into a slightly larger sauce pan filled with two inches of hot water; bring the water to a simmer and slowly melt the chocolate and butter together. Stir with an old beloved wooden spoon until the chocolate and butter are melted together. Remove the pans from the heat, and set aside the pan of chocolate and allow it to cool a bit (to warmish). Stir it often to keep it smooth. (Or you could do this melting thing the postmodern way and heat it in a glass dish in the microwave.)

On to the eggs. Using an electric mixer, beat the heck out of the eggs until they appear light colored and frothy; add the sugar and beat it all again until the mixture is thick and flows in ribbons, about 5-6 minutes.

Slowly - very slowly - pour about half of the warm chocolate into the egg-sugar mixture (to gently temper it). Beat on low to combine. At this point I switch over to my trusty wooden spoon, and blend in the remaining chocolate by hand. Add the vanilla.

Sift the cocoa into the batter and gently mix. If youre adding the almond flour, do the same. Lightly combine.

Pour the batter into the prepared spring-form pan and bake at 350 degrees F. for about 50 minutes. Ovens vary! Err on the near side if you like a fudgier texture; bake it longer and it becomes drier, more cake-like.

Note: the top of the cake may be cracked - thats fine. A toothpick inserted into the cake’s center will emerge clean with a few moist crumbs when done.

Cool the cake in the pan, on a wire rack. Loosen the cake from the edges of the pan with a small flexible spatula, and release the spring clasp.

You may serve the cake right side up or invert it onto a 9-inch serving plate and peel off the parchment. I like the shape of it as is, and serve it upright.

Dust the cake with cocoa powder or powdered sugar and garnish with a few scattered raspberries or mint leaves, if desired.

Lying in bed last night I was thinking I should make an espresso flavored whipped cream for a good sexy dollop.

Serves 10.

Gluten Free Vegan Pumpkin Berry Muffins

Gluten-Free Pumpkin Berry Muffins

You're gonna love the taste of these winter berry studded pumpkin muffins. They taste tart and sweet and grainy-tender all at once.

Yesterday we woke up to a surprise. The mesa and distant hills were powdered in white. The first snow of the season (am I ready for this?). The Kokopelli thermometer read twenty-two degrees. Extra thick toasty socks were needed. Steve made a morning fire in the kiva to warm us. Lucky for me, we had baked some pumpkin muffins this week. Tender, comfy break apart soul food for this bone-shivery goddess to nibble with her tea.

Does this Hollandaise less Smoked Salmon Eggs Benedict Make Me a Traitor

Wednesday, May 21, 2014
Im probably not the first person you think of when discussing adapting high-calorie recipes into lower fat ones. I know Ive done a few, but generally I believe one should make something in its full fat glory, or not at all. I hate to break it to you, but shredded, steamed chicken with fat-free yogurt on quinoa chips isn’t really "nachos."

This hollandaise-less smoked salmon eggs Benedict, however, has me on the other side of that argument. As promised, here is a video recipe for the plate you saw in the How to Poach Eggs demo. Youll have to take my word for it when I say that despite the absence of the traditional hollandaise sauce, it was really, really good.

As I explain in the clip, the dill butter spread, and the yolks from the poached eggs combine to form a fine substitute for the worlds highest calorie sauce. I think this idea can be adapted to feature any number of compound butters and meat combinations, and Id love to hear about any such breakfast experiments. I hope you give this a try soon. Enjoy!

Ingredients for the Dill Butter:
1/2 stick butter
2 tablespoons dill
1 teaspoon lemon zest
salt, fresh ground black pepper, and cayenne to taste

Ezo the Bride Soup Ezo Gelin Çorbası

Wednesday, May 21, 2014

Ezo was a real person who lived in the south eastern part of Turkey, close to Syrian border, in early 20th century. She had two miserable marriages, and died in Syria, homesick. There are films based on her hard, unfortunate life. But I have no idea why this soup is named after her.

The most important trivia about Ezo Gelin soup is that you cannot find a single Kebapçı (Kebab Restaurant) in Turkey that doesnt serve this soup. Its the best starter before kebap-you have to have the soup, and whatever you do at home, Ezo Gelin soup is always better at a Kebapçı, even at a sloppy one. Also, its famous for being a perfect hangover cure, after Tripe Soup (İşkembe Çorbası).

traditional ingredients:
1 cup red lentils
1/3 cup rice or bulgur
1 tbsp pepper paste
1 tbsp tomato paste
1 onion
2 cloves of garlic
1/2 tbsp dry mint leaves
1/4 tsp black pepper
pepper flakes, as much as you want
1 tbsp olive oil
salt
60 oz water

optional ones:
I usually add 1 small potato and 1 carrot

-If you have a pressure cooker and a hand blender, put everything in pressure cooker (chop onion, potato, and carrot in reasonable pieces) and cook for 25 minutes on medium heat. Then, use the blender to smoothen the soup.

-If you dont have a pressure cooker, you can still boil everything together until lentils and rice are soft.

-If you have neither a pressure cooker, nor a blender then you need to finely chop the onion; make sure its really finely chopped. You can also finely chop the potato and carrot, but I prefer grating them. Garlic should be minced. After all the chopping and grating, recipe is the same: put everything in a pot and cook until lentils and rice are soft. Stir every 5 minutes.

For the sauce:
-Heat olive oil or butter (1 tbsp for 2-3 servings) in a skillet
-When oil starts sizzling (if youre using butter, try not to burn it) add 1/2 tsp paprika and after approximately 30 seconds remove from the heat. Pour over the soup.

-Squeeze lemon on the soup before you eat

Chia seeds Porridge and Orchard syrup

Tuesday, May 20, 2014

Yes, I know it looks like Ive covered by porridge in black pepper and honey but honestly thats not what it is at all!

I told you about the Flahavans Irish Coarse Cut Oatmeal in my Wartime Kitchen post, but because Chia Seeds and Orchard Syrup wouldnt have been available during WW2, I couldnt include them in my post.

I don’t know if you have come across Chia before but it is a tiny seed found in flowers descended from the mint family in Mexico and Central America, has stormed onto the UK market as the most super of super foods, thanks to innovative Irish producers Chia Bia who are launching a range of Chia products including Whole Chia Seed and a range of Chia Nutrient Bars.

Chia is not only high in protein, Fibre and Antioxidants but is also the highest plant source of OMEGA 3 on the planet. Known as the “Running Food”, Chia’s most common use (as a high-energy endurance food) has been recorded as far back as the ancient Aztecs. Previously it was used to treat wounds, colds and sore throats, upset stomachs, body odours, prostate problems, and constipation. Despite being used so many years ago it isn’t until recently that we have seen a renaissance of Chia due to its health benefits. Chia Bia supply both Milled and Whole Chia seed packs.

With a write up like that the question is...what does it taste like?  I really enjoyed the Chiabia bar, its an organic muesli bar with cranberries, coconut and chia seeds on a whole milk chocolate base. It was quite sweet, but not in an artificial way and the cranberry fruit flavour came through, so I would recommend those.  However, Im not so sure about the Chia Seeds,  the flavour is not unpleasant but Im not sure it adds any flavour its more about the protein, fibre and antioxidants which are hard to measure in a review.  I may try to make my own oaty energy bars and include some of the Chia Seeds in them.

Highbank Orchard Syrup is a sweet, organic syrup made from apples grown on a family farm in Kilkenny, Ireland. “Ireland’s answer to maple syrup" also described as vegan honey this delicious,  pouring, organic syrup, is the first of its kind. Totally organic, this unique, healthy product is made from Irish, organic apples from the Highbank Orchard Farm. The syrup really comes alive as a glaze for a Christmas ham,  in porridge, or poured over warm pancakes with or without bacon.

This was a great addition to the porridge, a lovely sweet apple flavour.  I am baking a ham this weekend so will see how it works as a glaze.

Chia Bia Seeds 315g pack found on line at £12.09
Chia Bia Bar RRP £4.28, on line retailer £1.78 + P&P
Highbank Orchard Syrup  66ml bottle on line at £3.70, 200ml - £8.00

I was supplied with these products for review, I did not receive money and was not required to give a positive review. All opinions are my own.

Skirt Steak Taco with Grilled Onions and Avocado

Sunday, May 18, 2014

Time, once again, for my favorite thing in the world....TACOS!  This time I used skirt steak, also one of my favorite things, with grilled onion, chopped avocado and home made salsa on a toasted corn tortilla.  I really dont think there is a better meal on earth.

I took one skirt steak and seasoned it with salt, pepper, cumin and coriander.  I grilled it over a hot flame for about 2-3 minutes per side, but making certain it was still pink in the center.  The same seasoning for some sliced onion as well as a drizzle of oil and onto the hot grill for a few minutes per side.

When finished cooking, I let the meat rest for about 10-15 minutes and then sliced it very thin against the grain.  I toasted the corn tortillas for a few seconds on each side until they were pliable.  Next, arrange some of the grilled skirt steak on the tortilla and top with the grilled onions, chopped avocado some sour cream and fresh salsa.  The salsa is simply made by combining 1 tomato, 1/2 small onion, 1 garlic clove, 1 serrano chili pepper, juice of 1/2 lime, fresh cilantro and salt and pepper in food processor.  Pulse very quickly just until it is combined and chopped but not pureed.  You can also adjust the amount of heat by adding or subtracting chilis.

The best Eggplant Salad Recipe Десятка

Saturday, May 17, 2014
Did you know eggplant is actually a fruit (though served as a vegetable)? With it’s deep, glossy purple skin and wobbly egg or pear shape, it’s quite a unique looking food item! This is the best salad ever for people who love eggplants. Its awesome to bring to a party or put it in cans and use it at any time. I usually make half of this recipe for my family.

       Ingredients:
10 Eggplants
10 Bell Peppers
10 Tomatoes
10 Onions
15 cloves garlic

1 cup distilled vinegar
2 cups oil
3 tablespoons salt
6 tablespoons sugar

Print

  "Десятка" Print In Russian

You will make it in layers;
First tomatoes, 2nd onions, 3rd eggplants, last bell peppers . Follow the directions step by step.
  •  Slice eggplants longwise 1/3in thick (leave skin on)  sprinkle salt on top of each piece. Put aside so all bitterness comes out, for about an hour.
  • Then slice tomatoes into circles and put in a non stick cooking pot.
  •  Cut onion into circles add to the pot.
  • The eggplants will have liquid all over, so take a paper towel and tap until dry. Cut the eggplants (that you put aside to let out all of the bitterness out) in smaller pieces about a 3/4 of a inch of the finger thick size and add to the pot.
  • Cut bell peppers into small pieces and add to the pot. Next pour brine mix into the pot.
  • Boil for 45 min.
  • Turn off and add minced garlic.
  • The salad can be canned right after you boil it.

Sausage Stuffed Cherry Pepper Poppers – Because the Party with the Best Food Wins

Friday, May 16, 2014
Whether you want to admit it or not, its getting close to holiday entertaining season, and as far as Im concerned theres really only one measuring stick by which all holiday parties are judged – the food.

You can have the best DJ, the coolest place settings, even those novelty ice cubes in the shape of shapes, but none of that matters if your food is lame. Thats where these sausage-stuffed cherry pepper poppers come in.

The foundation of all great holiday party menus
are the hors doeuvres and appetizers. Most people will be drunk by the time the main courses are served, but when the party begins, and senses are yet to be dulled, a bad or boring array of small bites will not go unnoticed.

These super-simple, but memorable cherry pepper poppers will get the party started right. The next day, instead of talking about you trying to moonwalk with a lampshade on your head, or how you spilled a Bloody Mary on the bosss wife, people will be raving about "those little, red, spicy sausage pepper things."

By the way, the hardest thing about this recipe is finding these Peppadew peppers. Except for a few annoying exceptions, you know I like to use easy-to-find ingredients, but these gorgeous peppers, from the Limpopo province of South Africa, have such a wonderfully unique, sweet/spicy/tangy flavor that I wanted to use the real deal.

I was having a hard time finding them myself, but it was my mother-in-law Peggy who came to the rescue (again), and mailed these down to us as part of our anniversary gift. You can get them online for sure, and they are often found at the better gourmet grocery stores, but if you cant find them, most supermarkets do carry some type of jarred cherry peppers. Enjoy!

UPDATE: While I was making this recipe, I couldnt for the life of me remember where I saw this done for the first time. Well, I just talked to my mom Pauline, who informed me these were my Uncle Bills invention. I should have known! Thanks Uncle Billy!

Ingredients:
8 oz Italian sausage
2 jars Peppadew peppers (about 32)
1 tsp olive oil
chopped parsley

Rib Eye Steak Sandwich with Marinated Grilled Peppers and Onions

Thursday, May 15, 2014

Last night I said that I was glad I had some of the grilled vegetable salad left over because it would be so much more flavorful after it marinated over night.  Oh my goodness, I was so right.  This salad was perfectly delicious the night I made it, but after the flavors of the grilled vegetables and the capers, garlic and anchovies in the vinaigrette mingled with eachother it was out of this world.  I decided to thinly slice up the left over rib eye steak and spoon over some of those zesty peppers and onions for an instant steak sandwich.  After topping it with Guggisberg baby swiss cheese, I popped it in the oven for a few minutes until the cheese melted and the sandwich was heated through.  Yum!

I Got Your Halloween Costume Right Here

Thursday, May 15, 2014
Because more than two people have approached me with questions about what they should be for Halloween, I have no choice but to embrace my newfound authority on all things costume. I mean, honestly, it should be expected from the person who whipped up this Alexis Rose costume:
Yes, that is me dressed as a female version of Axl Rose. Was that "baller" I just heard you say??

Even though I had all the pieces of my costume purchased and in hand WEEKS ago, apparently there are still many of you out there scrambling to find a slutty version of a banana costume to wear. In an effort to help you avoid looking moronic (without intending to, anyway) and perhaps the most original youll look all year, Ive rounded up a few ideas. If Im leaving any good ones out, leave em in the comments!

Couple/Group costumes
Whats that saying? The more the merrier...and the less ridiculous you look? Yes, a couples or group costume can do wonders for the total effect of your look. After all, whats Fred without Barney? Beavis without Butthead? Or Courtney Stodden without her 50-year-old husband?? If what youre really looking to do is leave a mark at your Halloween shindig this year, grab a buddy or two and make one of these happen!

Adele and her ex-boyfriend
Although we dont know who he is, we know all too well what Adeles ex is probably the worst human being alive. So, one of you wear a low ponytail, black dress, and heavy winged eyeliner, and the other one dress up as Bernie Madoff.

Any "Real Housewives" Cast (preferably Beverly Hills)
Great for a gaggle of gals or a group of dudes comfortable with their sexuality, the Real Housewives franchise provides AMPLE opportunity to get all your real feelings about your friends on the table. While I havent watch each season, I dont see why you wouldnt want to go as the crazy ladies from Beverly Hills. I mean, theres a crazy former child star, Paris Hiltons aunt, and a meth addict...and thats just ONE person!! Oh, how the hilarity could, and surely will, ensue.

Amanda Knox and Casey Anthony
Look, its Americas Sweethearts! Now that theyve both been officially vindicated, we can all go back to proudly sporting mousy brown hair, dowdy clothes, and a crazy look in our eye. And ladies, word to the wise, if youre looking to hook up this Halloween, these are your costumes, because every guy I know would glady hate f*ck the hell out of these two. Youre welcome.

Tom Haverford and Jean-Ralphio
Its come to my attention in recent weeks that I have something a male readership, so boys, this ones for you. Parks and Recreation is one of my absolute favorite shows on the talk box right now. If youre not watching it and laughing every 3 seconds, we can no longer be friends. However, if youre already obsessdies with it like I am, youll know exactly who Tom and Jean-Ralphio are. Like an Amanda Knox/Casey Anthony duo, this one will no doubt bring all the ladies and their milkshakes to your yard, fellas. Bonus: these costumes dont require much more than a suit, a choreographed handshake, and an excessive amount of Axe body spray.

Inanimate Objects
Every year, some douchebag shows up to the party dressed as like, the national debt or a free mammogram (which should be taken seriously btw, ladies!), but instead of just TELLING people youre something completely douchey, why dont you actually try DRESSING as something douchey? Ehhhh???

iPhone Siri
Not since Robin Williams dramatic turn in American movie classic "Millennium Man" has a nation been so taken with artificial intelligence. Siri may not have feelings or ya know, a body, but what she lacks in physical traits she more than makes up for in her cold, callused demeanor. To be Siri this Halloween, you can wear an iPhone made out of cardboard and have people ask you questions all night with guaranteed bitchy responses, or you can just go as Santana from Glee. Its up to you.

The McRib
Sooooooooo, I dont know if you heard, but the McRib is back. Seeing how the point of Halloween is to scare the literal shit out of someone, and I can neither imagine anything scarier nor something that would induce as much fecal matter from a person as a McRib, heres the winner for scariest costume this year.

Suris Burn Book
If youre not religiously reading Suris Burn Book, please remedy this ASAP. Like Regina George before her, "Suri" takes pen to paper (or keystroke to Tumblr page) to muse on all things celebrity children, generally to reprimand her own mothers sense of style...or lack thereof. Suris burn book would be a great costume because it would give you free reign to chastise everyones clothing, shoes, and general demeanor. Bonus tip: Make it a couples costume and bring along mom Katie or wacky dad Tom!

Solo Costumes
Most of you will likely wait to the last minute to get your act together and end up flying solo costume-wise this year. These ideas should be both easy to wrangle up at the last minute and huge hits at whatever Halloween festivity you deem worthy enough to grace with your presence.

Lindsay Lohan
I wish there were some explanation I could provide for going as Lindsanity for Halloween, but nothing could really do as much justice as the visual above. Advice for the night: stay away from the candy, lest you want these teeth.

Boo, the Dog
Want to steal the attention from all the slutty cops, slutty angels, and slutty nuns on Halloween? What about all the people in costume, too?? Go as the worlds cutest dog then! All you need for this costume is excessive body hair and puppy dog eyes. A tail wouldnt hurt either. Warning: heavy petting may occur in costume.

Jennifer Lopez, who cant stop crying
By now, youve heard of JLos emotional on-stage outburst. What you havent seen is her offstage wallowing as well! This Halloween, stuff some junk in your trunk, wear all your diamonds at once, and burst into endless tears at the most inopportune moments possible. Apple Bobbing? More like Apple Sobbing! Pumpkin Carving? More like Pumpkin Crying! Trick-or-Treating?? More like Tears Trick-ling down My Face and Eat-ing My Feelings!!!! Alright, so that ones a stretch, but you get where Im going with this!!

Just Ham and Eggs

Wednesday, May 14, 2014
Hello from Atlanta, where Im hard at work eating and drinking my way around the 1st Annual Atlanta Food and Wine Festival. Been having a great time, and cant wait to share some of the great things Ive tasted with you, hopefully in video form.

In the meantime, here is a little Ham and Eggs video I did before I left.  Sure it tastes the same as if you cooked them separately, but thats really not the point. This looks cool, and besides, you only need one pan. Enjoy!

Halloween Candy Of Course!

Wednesday, May 14, 2014

Yup, I am sure that I am not alone in that a substantial part of my evening meal was, in fact, comprised of candy.  Candy and a strange spiced wine called "Witches Brew" which was heated on the stove, as directed, to a quite comforting warm temperature but not boiled.  The hint of cinnamon and clove was actually nice, initially, but quickly became icky. I then abandoned the Witches Brew for the much more upscale Beringer Pinot Noir which was my mothers contribution to the Halloween feast hosted by my brother.

In addition to the Twix and Witches Brew, I did actually make a substantial and quite tasty submarine sandwich for all of us to enjoy in between trick or treating and answering the doorbell.  The photo, however, is the tiny piece I was able to wrap up for next days lunch.  I totally forgot to take a photo which really bums me out because it was a nice sandwich!  I purchased these enormous 2 feet long sandwich rolls from Jimmy Johns for less than $1, a bargain by any measure.  A healthy heaping handful of turkey, ham, salami, baby swiss cheese, lettuce, onion and tomato made this picture perfect and, were it not for the Witches Brew, I would have remembered to snap that photo to prove it.
