Laal Aaloo


Ingredients
  • Baby potatoes 1 kg
  • Roasted crushed cumin 1 tbsp heaped
  • Roasted coriander crushed 1 tbsp heaped
  • Kashmiri red chilies (soaked in water) 15
  • Ginger garlic 1 tbsp
  • Salt 1 tbsp
  • Chat Masala 1 tbsp
  • Curry leaves 25 – 30
  • Tamarind pulp 1 cup
  • Sugar 1 tbsp
  • Oil ½ cup
Method
  • In a bowl mix together 1 cup tamarind pulp, 1 tbsp roasted crushed cumin, 1 tbsp roasted crushed coriander, 15 soaked ground Kashmiri chilies, 1 tbsp ginger garlic paste, 1 tbsp salt, 1 tbsp sugar and 1 tbsp Chat Masala, boil 1 kg potatoes and peel, heat ½ cup oil, add 25 to 30 curry leaves, then add tamarind spices mixture, fry well adding little water till oil comes on top, add boiled baby potatoes and mix well, simmer on low flame for 10 minutes, garnish with chopped coriander leaves.
