Gluten free dark chocolate cake
A rich dark gluten-free cake made with almond flour


This recipe is one Ive played with for years. It began in the nineties as one of those trendy flourless chocolate things with ten eggs, and has evolved into mere semi-indulgence with only seven eggs and some extra cocoa powder for a little more structure.

I love flourless chocolate cakes. So creamy and dense. But last night I experimented with blanched almond flour to see what would happen. It produced a deep dark chocolate experience. A worthy cake. And please note, Kind Reader, it only gets better as it sits overnight.

Ingredients:
12 ounces bittersweet or dark chocolate, chopped
1 1/2 sticks unsalted butter, cut into pieces (6 oz. butter)
1 tablespoon bourbon vanilla extract
7 large organic free-range eggs
1 cup organic light brown sugar, packed
1/2 cup organic white cane sugar
1/4 cup organic unsweetened cocoa
1/2 cup almond flour

To serve:

Sifted cocoa powder or powdered sugar
Fresh seasonal berries
Whipped cream, if desired

Instructions:
Preheat oven to 350ºF.

Line the bottom of a 9-inch Springform pan with a circle of parchment paper; tenderly butter the paper. Think: chocolate love.

Place the chocolate and butter in a medium to smallish saucepan, and set the pan into a slightly larger sauce pan filled with two inches of hot water; bring the water to a simmer and slowly melt the chocolate and butter together. Stir with an old beloved wooden spoon until the chocolate and butter are melted together. Remove the pans from the heat, and set aside the pan of chocolate and allow it to cool a bit (to warmish). Stir it often to keep it smooth. (Or you could do this melting thing the postmodern way and heat it in a glass dish in the microwave.)

On to the eggs. Using an electric mixer, beat the heck out of the eggs until they appear light colored and frothy; add the sugar and beat it all again until the mixture is thick and flows in ribbons, about 5-6 minutes.

Slowly - very slowly - pour about half of the warm chocolate into the egg-sugar mixture (to gently temper it). Beat on low to combine. At this point I switch over to my trusty wooden spoon, and blend in the remaining chocolate by hand. Add the vanilla.

Sift the cocoa into the batter and gently mix. If youre adding the almond flour, do the same. Lightly combine.

Pour the batter into the prepared spring-form pan and bake at 350 degrees F. for about 50 minutes. Ovens vary! Err on the near side if you like a fudgier texture; bake it longer and it becomes drier, more cake-like.

Note: the top of the cake may be cracked - thats fine. A toothpick inserted into the cake’s center will emerge clean with a few moist crumbs when done.

Cool the cake in the pan, on a wire rack. Loosen the cake from the edges of the pan with a small flexible spatula, and release the spring clasp.

You may serve the cake right side up or invert it onto a 9-inch serving plate and peel off the parchment. I like the shape of it as is, and serve it upright.

Dust the cake with cocoa powder or powdered sugar and garnish with a few scattered raspberries or mint leaves, if desired.

Lying in bed last night I was thinking I should make an espresso flavored whipped cream for a good sexy dollop.

You're gonna love the taste of these winter berry studded pumpkin muffins. They taste tart and sweet and grainy-tender all at once.

Yesterday we woke up to a surprise. The mesa and distant hills were powdered in white. The first snow of the season (am I ready for this?). The Kokopelli thermometer read twenty-two degrees. Extra thick toasty socks were needed. Steve made a morning fire in the kiva to warm us. Lucky for me, we had baked some pumpkin muffins this week. Tender, comfy break apart soul food for this bone-shivery goddess to nibble with her tea.

Here's a bright and delicious slow cooker stew recipe with sausages - and it's tasty using any sausage you choose, from free-range roaming buffalo to furry-friendly vegan. Scrumptious. Seriously. Make it for the Big Game. You know, the one with a pigskin ball and helmeted men in shiny tights. Throw all the ingredients in a Crock Pot and go root for your favorite tight end. Make a hot artichoke dip and grab some gluten-free chips. Game on.

Okay I confess. I'm not watching the game. Game fever is something utterly, totally beyond me. Apparently I lack a few mirror neurons. Sports? Yawn. I dare you to make me comprehend football. Go ahead. Try. Many have tread that tortuous path and failed, my friend. Great minds have worked tirelessly to convey the rules, to communicate the strategy. The triumph. The back field in motion and the blitz.

But what they don't realize? Deep down inside my private tiny girl heart- my neurons don't CARE. They really don't. And I know you think that if only I let you explain The Game to me I would finally, miraculously, ecstatically get it! And paint my face red and blue, but. It's never going to happen. 

It's a non-conforming neuron issue.

So, the Patriots? Are they the soccer team Mel Gibson coaches? Excuse me while I alphabetize my spice rack.

Sunday Worthy Gluten-Free Pancakes


When I was small and clueless I ate the world in tiny bites. I chewed apologetically, counting each deliberate grind in time to the spiral beats of a song in my head that only I could hear. A tune not unlike a mosaic of bird calls, and the powdery flutter of wings feeding on the garden lit by young Mozart's star.

Colors were a mysterious and spiritual language infused with deep logic and meaning. A lime green Jello box invited tunneling and confusion, but the sweet brush of balsam as I sought asylum beneath its rooted symmetry petted my pining fatherless heart.

Trust is green and hard to paint, but so is betrayal.

Not only the betrayal by others. The betrayal you participate in. The hammering of your spirit self into propriety. The brittle, safe shell you construct and will curl inside for the rest of your life. You inhabit it sullenly. Sometimes willingly. Because sometimes it works. Mostly to fool them. Fool them into thinking you are someone else. Someone uncomplicated they can love. Someone like themselves.

In order to keep this armor snug you must give up on certain pieces of yourself. The ugly, muddy parts those in charge find distasteful or irritating or inscrutable. What no one tells you is, you end up missing these rejected quirks and knots. And spend the rest of your life searching for all those abandoned bits and wrinkles. The shining fragments of earlier music and jewels of petaled rain.

But if you are lucky you meet a painter.

A soul adept at conjuring a thicket within their non-judging arms. You learn about green and its secret origin. How to stir ivory black with cadmium yellow and a teaspoonful of cerulean. You dream of butterscotch pines and inhale and your spirit-body becomes too big for the worn out shell.

So you crack it.

Sideways at first. Sticking out fingers and elbows when no one is looking. Digging out fragments long forgotten. Rubbing off neglect and holding wobbly pale parts of yourself closer to the sunlight.

And you meet yourself for the first time in a long, long time.

In the rays escaping.

For the first time in a long, long time I made pancakes. 

Because I craved a family Sunday with pancakes.

And lots of maple syrup.

Gluten free pumpkin streusel muffins
My new pumpkin muffin recipe- with streusel topping.



This isn't a Halloween post. Or a Thanksgiving post. Technically. Though Thanksgiving is just a stone's throw away- if you somehow conjure a metaphorical stone to metaphorically hurl into the time-space continuum, piercing the veil of eight and a half weeks that blows by in a singular exhale, surely faster than light. And this exhale, it was only following a previous breath- a breath I took yesterday- which turns out to be one year ago. A year since that Pumpkin Praline Pie I baked. I have a hard time wrapping my brain around this.

This is a post about time.

Some days I feel as if I am slave to the calendar, an unwitting cog in the wheel of the year with Sundays and holidays appointed by proxy, designated by some superior force that rules my random wandering nature with an unforgiving fist, demanding obedience. Charting the course of my life.

Then I remember the truth.

Gluten and egg free vegan fruit flan recipe

It is summer time now in the United Kingdom.

Chef Jeena will be cooking lots of summer food recipes for you to enjoy, so keep visiting us.

Chef has baked a gluten free vegan fruit flan recipe that is simple to bake, delicious to eat and looks amazing when placed on the table for a dessert.

The flan base is a combination of dairy free margarine, sugar, rice flour and ground almonds with a little ground flax seed to help bind the mixture together.

Chef topped the gluten free flan base with some dairy free cream using fresh vanilla pods, but you could also use Chefs vegan whipped cream recipe.

The fruit topping was made of fresh strawberries and blueberries and it tasted wonderful.

This flan did not last very long in Jeenas Kitchen, so make sure you get a piece of this fruit flan recipe to eat yourself or else everybody just might devour it before you get a chance to eat some yourself-enjoy.





Ingredients for chefs fruit flan recipe


100g Margarine
100g White caster sugar
100g Ground almonds
80g Rice flour
2 Tbsp Ground flaxseed
2 Tbsp Cornflour (corn starch)
80g White caster sugar
1 tsp Xanthan gum
1 tsp Baking powder
Pinch salt
1 Tbsp Vanilla essence
150ml Soya milk

Chefs Dairy free cream recipe
or Chefs Vegan whipped cream
Fresh strawberries and blueberries

How to make a gluten free vegan fruit flan recipe


Cream margarine and 100g caster sugar together using a mixer. Add almonds, rice flour, baking powder, salt, xanthan gum, flax powder and corn starch - mix well.

The flan mixture will start to come together very thick - start adding the milk gradually.




Picture of tablespoons of ground flaxseed and cornflour.



Add 80g of sugar and vanilla essence - mix well.


Pour into a greased and floured flan tin - I only needed 3/4 of the flan base mixture and baked some of my vegan mini cupcakes with the left over mixture.

Place into a hot oven at gas mark 6 and 1/2 (in between gas mark 6 and 7) for 25 minutes - do not open the oven door until 20 minutes has past.



Leave the flan base in the hot oven tin for 8-10 minutes before removing the flan from the oven tin. Leave on a cooling rack to cool down completely.



Once cool spread with fresh dairy free cream and top with fresh fruit.
